We took the same vintage blending philosophy that we used to create Small Batch, except this time the goal was to create high proof bourbon that tasted its best neat. Uncut is so rich and sweet with an unbelievably thick mouth feel, the heat and rye spice finish are a welcome addition. It's like milk with cookies! Blending vintages of our high rye mash bill to achieve this flavor profile at 115-116 plus proof was a very rewarding challenge for us. There is a delicate balance between creamy mouthfeel, tannins and sugars that comes into play that makes the end result magical. Older vintages have more evaporation which means a higher concentration of fats and sugars per ounce which gives them a nice creamy mouthfeel as well as caramel and honey goodness. They also have more tannins because alcohol has been in contact with the wood for longer. A lot of what some perceive as alcohol burn is actually a harshness due to tannins. This can counterbalance the benefit gained by the high concentration of lipid esters insulating your pallet from alcohol heat. There needs to be enough of the older bourbon for the oak flavors and mouthfeel, but also some younger ones to cut back on the tannins and bring in some delicate fruit and caramel flavors.

From the Sonoma County Distillers out in California comes a 100% rye, matured in new charred American oak barrels and bottled at 48% ABV. A blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. Toki has a different composition to another Suntory blend, Hibiki, as its main components are Hakashu single malt and Chita grain whisky. It should work really well in a highball.

Made from 100% Malted Barley from a range of different ages including Malt whiskey distilled in 1991. Our aim was to produce the most flavoursome non-age statement Irish Single Malt based on our innovative maturation and finishing techniques while retaining the distinctive Irish smoothness. Consists of a vatting of 5 different wine cask (Sherry, Port, Madeira, White Burgundy, Cabernet Sauvignon) finished Irish Malt whiskeys. Like all the Teeling whiskeys, it is bottled at 46% with no chill filtration allowing all the natural flavours of the whiskey to be retained.

Templeton 6yr is a full flavored Rye showing aromas of cherry, apple and ginger spice. Upfront sweet flavors of honey lead into sweet baking spices, oak and a touch of peppermint. The drinker is rewarded with a long smooth spicy finish.

Templeton Rye 4 Year is the perfect intro to the Templeton portfolio. This medium bodied rye shows aromas of dried grass and rye spice. The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.

To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics.
